Oh No! How-to Do A Rushed Dinner

I got a call from Hubby, dur­ing the mid­dle of a chaotic melt­down by all 4 kids. I think they know the phone is going to ring & go into chaos mode. Any­way, Hubby let’s me know that we could sign the loan paper­work for the van & then go pick up the van right after. His par­ents were going to watch the kids while we ran to the bank & then to pick up the van. In less than 2 hours he’d be home so we could start the process at the bank. Only prob­lem is all this would run over past din­ner time & Hubby informs me that he told his par­ents I’d have din­ner ready (or at least ready to pop in the oven). No stop­ping for a pizza on the way home this time. This means I’d have to get din­ner ready as soon I put the phone down, giv­ing me time to fin­ish writ­ing, get the kids set­tled, & take a shower (or at least put on a clean shirt). You know all the things I should have been doing but instead was search­ing the web, break­ing up fights over toys, car­ing for kids & attempt­ing to write all while breast­feed­ing a baby.

Now what’s a girl to do? Besides cuss at Hubby & then cry, curl up in a ball, & rock on the floor? Make some­thing fast, easy, & can be popped in the oven by any­one. And that’s exactly what I did. It’s easy to put together, every­one here loves it, & does taste good.

Baked Omelet Casserole

Serves 8 hearty serv­ings, more if you serve with extras. We cut fresh fruit & toast to serve with ours.

Need:
11 eggs
1/2 of an onion
1 ham steak
1 cup of milk
3/4 cup of ched­der cheese
2 cups of pre­made hash­browns
salt & pep­per to taste

Crack eggs into large enough bowl that will allow you to mix in other ingredients

Get 1 onion, use only 1/2

Get One Hamsteak

Cut into 4ths, Makes it a Lit­tle Eas­ier to Dice

Dice up the Onion and Ham

Add Milk, Salt & Pep­per into Eggs

Then Whisk Together

Now Add in your Scram­bled Egg Bowl: Hash­browns, Diced Onion, and Cheese

Whisk Them All Together

Put Diced Ham in Casse­role Dish

Pour Scram­bled Egg/Onion/Hashbrown/Cheese Mix over the Ham in the Casse­role Dish and Mix it All Together

Cover with plas­tic wrap until time to pop in the oven arrives.

When you are ready to eat just pre­heat the oven to 350 degrees, then bake for 45 min­utes in or until it’s cooked all the way through.

Here is what it looked like, I ate after we got back from get­ting the van. Which is a whole other story.

You can make this any­where from 24 hours before need­ing to bake it or right before you put it in the oven. It’s up to you & how much time you have.

Sub­sti­tu­tions: You can sub­sti­tute any other break­fast meat for the ham or leave it out. Hubby liks a cup of coun­try sausage (ground) in his, but the ham steak was eas­ier to man­ange for me. You can also what­ever other veg­gies you like, my clan is just picky right now and onions are all I can sneak past them.

And can I say that I love my mother-in-law for always being will­ing to help us out.
