Last Minute Creamy Garlic Tomato Soup

After I was released from jury duty yes­ter­day I real­ized it was almost lunchtime when I got home, but was short on time. So I decided to make soup. Yes, on a hot & humid day I decided to buck Mother Nature’s refusal to let Fall arrive eas­ily & make soup. She isn’t the boss of me, only the boss of my weather.

The soup I made is my fast & easy last minute tomato soup. It works great when you are short on time and aren’t able to make a soup from scratch & want some­thing more inter­est­ing than the more bland tomato soup. It’s a semi-homemade ver­sion of a Creamy Gar­lic Tomato Soup.

I must con­fess that I adore toma­toes, every­thing tomato. When I was kid I was lit­tle unsure at times about raw toma­toes if they lacked salt & pep­per (that’s right salt & pep­per). But now that I’m older & wiser, I’ve seen the error of my tomato lack­ing ways & love it in all forms. I even grow them out back in the veg­gie garden.

Here is what you need:

Pour the Tomato Soup into the pot

Add in 1 tsp of Ital­ian Seasoning

Peel 1 clove of garlic.

I press mine right in using a gar­lic press

Did I men­tion I also love gar­lic?  I let it seep out of my pores.

You can add 1/2 a clove if you like less garlic.

Me because of my love affair with gar­lic I’d roll around naked in a bed of gar­lic if I could.

That is how much I love garlic.

Then stir and cook until warm on a low to medium heat

When it’s done top it with some Parme­san cheese

I didn’t add any onions to this soup yes­ter­day, but I have made it with about 1/3 of onion finely chopped. If you decide to add onions you would want to cook them over low heat w/ a pat of but­ter in the pot you will use for the soup. Do this BEFORE adding the tomato soup & cook onions until they begin to get clear or translu­cent. Then con­tinue with the rest of the recipe.

It’s a great soup to serve with a sand­wich on a cool Fall day. Or if you are like me & aren’t going to cave to Mother Nature you can eat it on a hot & humid day. Either way it’s so yummy & works when short on time.

That looks really yummy, and while I love tomatoes I am not always a fan of tomato soup. I do have a box of the stuff in the house, so maybe I’ll give it a whirl.

That looks delicious! I had never thought of adding garlic and parmasean to tomato soup, but I think it’s a great idea! I am so hungry!!!
