After I was released from jury duty yesterday I realized it was almost lunchtime when I got home, but was short on time. So I decided to make soup. Yes, on a hot & humid day I decided to buck Mother Nature’s refusal to let Fall arrive easily & make soup. She isn’t the boss of me, only the boss of my weather.
The soup I made is my fast & easy last minute tomato soup. It works great when you are short on time and aren’t able to make a soup from scratch & want something more interesting than the more bland tomato soup. It’s a semi-homemade version of a Creamy Garlic Tomato Soup.
I must confess that I adore tomatoes, everything tomato. When I was kid I was little unsure at times about raw tomatoes if they lacked salt & pepper (that’s right salt & pepper). But now that I’m older & wiser, I’ve seen the error of my tomato lacking ways & love it in all forms. I even grow them out back in the veggie garden.
Here is what you need:

Pour the Tomato Soup into the pot

Add in 1 tsp of Italian Seasoning

Peel 1 clove of garlic.

I press mine right in using a garlic press

Did I mention I also love garlic? I let it seep out of my pores.

You can add 1/2 a clove if you like less garlic.
Me because of my love affair with garlic I’d roll around naked in a bed of garlic if I could.
That is how much I love garlic.

Then stir and cook until warm on a low to medium heat

When it’s done top it with some Parmesan cheese

I didn’t add any onions to this soup yesterday, but I have made it with about 1/3 of onion finely chopped. If you decide to add onions you would want to cook them over low heat w/ a pat of butter in the pot you will use for the soup. Do this BEFORE adding the tomato soup & cook onions until they begin to get clear or translucent. Then continue with the rest of the recipe.
It’s a great soup to serve with a sandwich on a cool Fall day. Or if you are like me & aren’t going to cave to Mother Nature you can eat it on a hot & humid day. Either way it’s so yummy & works when short on time.

That looks delish! Found you from SITS.
My son says that garlic is the smell of heaven!
That looks really yummy, and while I love tomatoes I am not always a fan of tomato soup. I do have a box of the stuff in the house, so maybe I’ll give it a whirl.
That looks delicious! I had never thought of adding garlic and parmasean to tomato soup, but I think it’s a great idea! I am so hungry!!!
