I love muffins. I love Apple Spice Muffins. I love the aroma that fills the air when they are baking in the oven it smells like Heaven floating around you. Then biting into one with warmth of a fresh Apple Spice Muffin melting in your mouth is better than 10 minutes of peace and quiet. And for me that’s saying something, because peace & quiet is at a premium around here these days.
What You Need:
1/4 Cup Granulated Sugar
2/3 Light Brown Sugar
2 Cups All-purpose Flour
2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Nutmeg
1/4 Teaspoon Ginger
1/4 Teaspoon Ground Allspice
1 Teaspoon Vanilla
1/2 Cup Milk
1/4 Cup Vegetable Oil
2 Eggs
1 Cup Applesauce
Makes 12 muffins.
You will cook them at 400 degrees for 20–25 minutes.
Preheat your oven to 400 degrees. Do that at the start of your baking, then when you are done with the muffin batter you can pop them into a hot oven.
Add all of your dry ingredients into your mixer. I use a Kitchen Aid mixer. It’s a heavenly aroma that starts to waft up. Wafting, wafting, wafting away.
Now add in all your wet ingredients. This means the milk, eggs, oil, applesauce and vanilla. Everything else was added in the first step.
Now mix. You don’t need to over mix, just incorporate everything together. Then pour into your muffin tin. I don’t line my muffin tins because the kids like to just tear into their muffins. Lining slows down the eating. So, if you are like me & don’t line then do grease your tin (e.g. butter, butter spray).
Alright pop into your oven at 400 degrees for 20–25 minutes. And wait. Patiently wait. I am not a patient waiter.
It turns out my children are not either. When I make these I hear about every 5 nanoseconds “Are the muffins ready?”
Take them out of the oven. You can place them on a cooling rack. Try not to eat them all in one sitting. Spread them out over the day.
