Apple Spice Muffins

I love muffins. I love Apple Spice Muffins. I love the aroma that fills the air when they are bak­ing in the oven it smells like Heaven float­ing around you. Then bit­ing into one with warmth of a fresh Apple Spice Muf­fin melt­ing in your mouth is bet­ter than 10 min­utes of peace and quiet. And for me that’s say­ing some­thing, because peace & quiet is at a pre­mium around here these days.

What You Need:

1/4 Cup Gran­u­lated Sugar
2/3 Light Brown Sugar
2 Cups All-purpose Flour
2 Tea­spoons Bak­ing Pow­der
1/2 Tea­spoon Bak­ing Soda
1/4 Tea­spoon Salt
1 Tea­spoon Ground Cin­na­mon
1/2 Tea­spoon Ground Nut­meg
1/4 Tea­spoon Gin­ger
1/4 Tea­spoon Ground All­spice
1 Tea­spoon Vanilla
1/2 Cup Milk
1/4 Cup Veg­etable Oil
2 Eggs
1 Cup Applesauce

Makes 12 muffins.

You will cook them at 400 degrees for 20–25 minutes.

Pre­heat your oven to 400 degrees. Do that at the start of your bak­ing, then when you are done with the muf­fin bat­ter you can pop them into a hot oven.

Add all of your dry ingre­di­ents into your mixer. I use a Kitchen Aid mixer. It’s a heav­enly aroma that starts to waft up. Waft­ing, waft­ing, waft­ing away.


Now add in all your wet ingre­di­ents. This means the milk, eggs, oil, apple­sauce and vanilla. Every­thing else was added in the first step.

Now mix. You don’t need to over mix, just incor­po­rate every­thing together. Then pour into your muf­fin tin. I don’t line my muf­fin tins because the kids like to just tear into their muffins. Lin­ing slows down the eat­ing. So, if you are like me & don’t line then do grease your tin (e.g. but­ter, but­ter spray).

Alright pop into your oven at 400 degrees for 20–25 min­utes. And wait. Patiently wait. I am not a patient waiter.

It turns out my chil­dren are not either. When I make these I hear about every 5 nanosec­onds “Are the muffins ready?”

Take them out of the oven. You can place them on a cool­ing rack. Try not to eat them all in one sit­ting. Spread them out over the day.
