Insalata Caprese: Roma Tomato, Mozzarella & Basil Salad

Insalata Cap­rese is a really sim­ple dish that is big on fla­vor.  You don’t have to turn on the stove or slave over the dish.  Instead it takes mere min­utes! We have been serv­ing it while we wait for din­ner or lunch to fin­ish.  The kids have even worked up to try­ing a bite of tomato with their fresh moz­zarella.  I’m hold­ing out hope that they will be fans like Hubby & I are.

What You Need:

3–4 good sized Roma Tomatoes

1 lb Moz­zarella cut into thick slices

About –6 Fresh Basil leaves torn or cut into pieces (it MUST be fresh!!)

1 Table­spoon Extra Vir­gin Olive Oil

Sea Salt to taste

Fresh Cracked Pep­per to taste


How to Put it Together:

Sim­ple you just layer the toma­toes & cheese on a dish after cut­ting them into slices.  Top with olive oil & the torn or cut fresh basil. Then sprin­kle your sea salt & pep­per. Done!

Tell every­one how hard it was. How you slaved over the salad. How gru­el­ing it was.  And just don’t let them know it took only a few min­utes to put together this crisp, tasty & aro­matic salad. When you serve it you can also offer some trivia. Like did you know the insalata cap­rese is also called the insalata tri­col­ore because it has the 3 col­ors from the Ital­ian flag.  See, now you can seem like a smarty pants & make din­ner too!

Always love a good caprese anything. Over the past weekend I had some spare fresh mozzarella and experimented with a fried egg caprese. It was quite good!

This is one of those dishes I could eat every day! I like to throw a few capers on mine, but even without them it’s still yum-o.
