Insalata Caprese is a really simple dish that is big on flavor. You don’t have to turn on the stove or slave over the dish. Instead it takes mere minutes! We have been serving it while we wait for dinner or lunch to finish. The kids have even worked up to trying a bite of tomato with their fresh mozzarella. I’m holding out hope that they will be fans like Hubby & I are.
What You Need:
3–4 good sized Roma Tomatoes
1 lb Mozzarella cut into thick slices
About –6 Fresh Basil leaves torn or cut into pieces (it MUST be fresh!!)
1 Tablespoon Extra Virgin Olive Oil
Sea Salt to taste
Fresh Cracked Pepper to taste
How to Put it Together:
Simple you just layer the tomatoes & cheese on a dish after cutting them into slices. Top with olive oil & the torn or cut fresh basil. Then sprinkle your sea salt & pepper. Done!
Tell everyone how hard it was. How you slaved over the salad. How grueling it was. And just don’t let them know it took only a few minutes to put together this crisp, tasty & aromatic salad. When you serve it you can also offer some trivia. Like did you know the insalata caprese is also called the insalata tricolore because it has the 3 colors from the Italian flag. See, now you can seem like a smarty pants & make dinner too!

Always love a good caprese anything. Over the past weekend I had some spare fresh mozzarella and experimented with a fried egg caprese. It was quite good!
