Hubby wanted to make an apple cake. After we got the Costco Connection in the mail he saw this recipe. It was perfect timing, given we had a million apples. He then surprised me by taking the apple cake making plunge. It’s why I don’t have pictures of the steps, because I was not expecting it!
And I will admit it was delicious, I barely let it make it to the plate before I started to eat it. It was a great treat, made even greater by the fact that I didn’t make it. The kids also devoured it. I mean licking crumbles off the plate type devouring. Apple cake proves yet again that if apples are in the form of dessert they are popular with the rabble-rousers.
I highly recommend trying the recipe out. Although Hubby is not available to make it for you, so you’ll have to do that part on your own.

Caramel-Glazed Apple Cake
What you need for the Cake:
1 cup packed light brown sugar
1 cup granulated sugar
1 1/2 cups vegetable oil
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
5 Washington Granny Smith or Golden Delicious apples, cored, peeled and cut in 1/2-inch pieces
1 1/4 cups chopped pecans or walnuts
2 1/4 teaspoons vanilla extract
What you need for the Caramel Glaze:
4 tablespoons butter
1/4 cup granulated sugar
1/4 cup light brown sugar
Pinch of salt
1/2 cup heavy cream
1. Preheat oven to 325°F. Butter and flour a 9-by-13-inch pan.
2. To prepare the cake, beat both sugars and oil in a mixing bowl until very well blended. Add eggs one at a time, beating well after each addition. Sift together flour, baking soda, cinnamon, nutmeg and salt; gradually add to eggs, mixing just until blended. Stir in apples, pecans and vanilla; pour into pan.
3. Bake for 50–75 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan while preparing the glaze.
4. To prepare the glaze, melt butter in a saucepan over low heat. Stir in both sugars and salt; cook over medium-low heat for 2 minutes. Add cream and boil for 2 minutes, stirring constantly.
5. Poke holes in the cake with a skewer or toothpick. Pour on the glaze.
Serve warm or at room temperature. Top with whipped cream or ice cream if desired. Makes 12 servings.

I made this cake for my family over thanksgiving… served it with two fresh apples on the side and drizzled it with the caramel glaze… it got rave reviews… would definately make it again.
However- it was not an easy recipe. You have to peel, core and cut 5 apples, and the cake batter gets EXTREMELY thick… thicker than peanut butter… almost like a dough… try mixing the apples, walnuts, and vanilla into a dough…. it was a lot of work (i toned my biceps in the process). If you are up for the challenge…. this is great! We served it room temperature, but i tried it warm- great both ways!

I asked my husband about the dough, he said he used our Kitchen Aid mixer & that made mixing it easier.
On a positive, if you get a mini-workout making it that means 2 pieces for dessert!
