Costco’s Caramel-Glazed Apple Cake

Hubby wanted to make an apple cake. After we got the Costco Con­nec­tion in the mail he saw this recipe. It was per­fect tim­ing, given we had a mil­lion apples. He then sur­prised me by tak­ing the apple cake mak­ing plunge. It’s why I don’t have pic­tures of the steps, because I was not expect­ing it!

And I will admit it was deli­cious, I barely let it make it to the plate before I started to eat it. It was a great treat, made even greater by the fact that I didn’t make it. The kids also devoured it. I mean lick­ing crum­bles off the plate type devour­ing. Apple cake proves yet again that if apples are in the form of dessert they are pop­u­lar with the rabble-rousers.

I highly rec­om­mend try­ing the recipe out. Although Hubby is not avail­able to make it for you, so you’ll have to do that part on your own.

Here’s the recipe from Easy Cook­ing The Costco Way.

Caramel-Glazed Apple Cake

What you need for the Cake:

1 cup packed light brown sugar
1 cup gran­u­lated sugar
1 1/2 cups veg­etable oil
3 eggs
3 cups all-purpose flour
1 tea­spoon bak­ing soda
2 tea­spoons cin­na­mon
1/2 tea­spoon nut­meg
1/2 tea­spoon salt
5 Wash­ing­ton Granny Smith or Golden Deli­cious apples, cored, peeled and cut in 1/2-inch pieces
1 1/4 cups chopped pecans or wal­nuts
2 1/4 tea­spoons vanilla extract

What you need for the Caramel Glaze:

4 table­spoons but­ter
1/4 cup gran­u­lated sugar
1/4 cup light brown sugar
Pinch of salt
1/2 cup heavy cream

1. Pre­heat oven to 325°F. But­ter and flour a 9-by-13-inch pan.
2. To pre­pare the cake, beat both sug­ars and oil in a mix­ing bowl until very well blended. Add eggs one at a time, beat­ing well after each addi­tion. Sift together flour, bak­ing soda, cin­na­mon, nut­meg and salt; grad­u­ally add to eggs, mix­ing just until blended. Stir in apples, pecans and vanilla; pour into pan.
3. Bake for 50–75 min­utes, or until a tooth­pick inserted in the cen­ter comes out clean. Let cool in the pan while prepar­ing the glaze.
4. To pre­pare the glaze, melt but­ter in a saucepan over low heat. Stir in both sug­ars and salt; cook over medium-low heat for 2 min­utes. Add cream and boil for 2 min­utes, stir­ring con­stantly.
5. Poke holes in the cake with a skewer or tooth­pick. Pour on the glaze.
Serve warm or at room tem­per­a­ture. Top with whipped cream or ice cream if desired. Makes 12 servings.

Mmmm, that does look scrumptious! I wish I could just make an order to have it delivered, but I guess I’ll just have to have the kids help me make it. That would probably be more fun anyways.

I made this cake for my family over thanksgiving… served it with two fresh apples on the side and drizzled it with the caramel glaze… it got rave reviews… would definately make it again.

However- it was not an easy recipe. You have to peel, core and cut 5 apples, and the cake batter gets EXTREMELY thick… thicker than peanut butter… almost like a dough… try mixing the apples, walnuts, and vanilla into a dough…. it was a lot of work (i toned my biceps in the process). If you are up for the challenge…. this is great! We served it room temperature, but i tried it warm- great both ways!

Thanks for the feedback, Erin! It’s on our list to make again too.

I asked my husband about the dough, he said he used our Kitchen Aid mixer & that made mixing it easier.

On a positive, if you get a mini-workout making it that means 2 pieces for dessert! :)
